Bean Dip

This easy bean dip comes together with just refried beans, Ro-tel, taco seasoning, and cheese—straight from the pantry. Perfect to scoop up with chips, taquitos, or tucked into a tortilla.

I cannot remember a time when we didn’t have all three cans I needed to whip up this microwaveable and completely snackable dip. I don’t measure anything for this anymore. I just do a sprinkle of the taco seasoning and a handful (or 2) of shredded cheese. I think the hardest thing about this dip is sharing it!

What You’ll Need (don’t blink, it’s a short list!)

  • Refried beans–creamy and satisfying; they’re the legumes we love! Buy them in bulk to always have on hand.
  • Ro-tel tomatoes–any flavor works but I buy the OG cans at Sam’s Club or Costco by the case.
  • Taco Seasoning–I use my homemade blend (recipe coming soon) but any will do in a pinch.
  • Shredded cheese–Add as much or as little as you want. I usually stir it in, taste it, and add more as needed.

How To Make It

Mix all the ingredients together in a microwave safe bowl and heat and stir and eat and enjoy.

Make It Your Own

  • Add in some meat–cilantro-lime chicken, smoked pork, ground beef, the possibilities are endless.
  • Turn it up–the spice-level that is. Add in some hot sauce, some cayenne pepper, or extra taco seasoning.
  • Veg it up–add in some sliced green onions, diced green chilies, chopped jalapenos, pickled red onions, or fresh cilantro.
  • Make it a meal–as a burrito, on top of a quesadilla, or topping for nachos and lunch or dinner is served.

Leftovers? If you have any, no worries, this reheats beautifully in the microwave.

Ingredients
  

  • 2 14.5 oz cans refried beans
  • 1 14.5 oz can Ro-Tel tomatoes with green chiles
  • 1-2 Tbsp Taco Seasoning Mix
  • 1-2 cups shredded cheese any flavor works well, our fave is Mexican blend or colby-jack
  • 1-2 green onions, sliced *optional*

Instructions
 

  • Mix first three ingredients in a microwave-safe bowl.
  • Microwave on high for 3-4 minutes.
  • Stir.
  • Add in cheese.
  • Microwave another 1-2 minutes.
  • Stir well and serve while warm.

Notes

We like this with Mission tortilla strips. If you have some leftover meat, throw it in. Cilantro lime chicken or smoked pork both work especially well.
