Obsessed is the best way to describe how I feel about Salad and Go (a fast drive-thru salad restaurant). Our whole family jokes about why it’s not called Salad and Stay or Salad and Skedaddle or Salad and Split, among others. We love the frozen strawberry lemonade (try it dirty!) and all their salads and wraps. Hands-down, my favorite dressing is the spicy Thai peanut and I have paired it with multiple salads (not just the Thai).
Today is one of those days…lazy, can’t-be-bothered-to-go-outside. To be fair, it’s over 100 degrees, so there’s that. But I was craving a salad. Crispy, crunchy, fresh veggies, silky dressing. Swoon.
Since I wasn’t about to leave the house, I chose to mix up my own version of my favorite dressing from Salad and Go and create a crave-worthy salad. #saladandstay
I should have taken a picture…but just know it was beautiful. I used chopped romaine, diced hearts of palm, diced cooked beets, sliced green onions, diced carrot, diced celery, smoked turkey, and baby tomatoes. I poured over a few glugs of this freshly made peanut dressing and it was so.very.good! Maybe even better than Salad and Go. No worries, I will still go when I need a fast and healthy lunch or dinner or a frozen strawberry lemonade.

Thai Peanut Dressing
Ingredients
- ¼ cup creamy peanut butter at room temperature
- 3 tablespoons avocado oil
- 3 tablespoons lime juice about 1.5 limes
- 2 tablespoons rice vinegar or regular vinegar
- 2 tablespoons Bragg’s liquid aminos
- 1 tablespoon fish sauce
- 2 cloves garlic minced
- 1 cube ginger minced frozen from Trader Joe's
- 1-2 squirts of sriracha sauce
- salt & pepper to taste I used a pinch of pink salt, and several cranks of freshly ground pepper
Instructions
- Mix everything together in glass jar with lid screwed on tightly until smooth.
- Adjust seasonings to taste.
- Add extra lime juice or vinegar to change viscosity.
